Subtraction first
A good kitchen is mostly things you have removed. The gadget drawer is where enthusiasm goes to be stored.
I cook well with eight items: one heavy pan, one pot, one sheet tray, one sharp knife, a board, tongs, a mixing bowl, and a scale. Everything else earned its way out.
The standing breakfast
Coffee, bread, salted butter, something acidic. Four minutes, no decisions, the same every day. The point of a repeated meal is that it costs you nothing to begin the morning.
Sharpen the knife
More than any recipe, this. A dull knife makes prep tedious, and tedious prep is the reason people stop cooking. Ten strokes on a stone once a week is the highest-return habit in the room.
